Exotic Mango Pudding: A Tropical Escape

On a hot summer day, if there is anything that can instantly take you away from the hustle and bustle of the city and bring you a touch of coolness and tropical flavour, it must be this exotic Mango Pudding – an unforgettable tropical indulgence.

Mango, known as the “king of fruits”, has won the hearts of countless food lovers for its unique sweetness and rich nutrition. When it meets the delicate and smooth pudding, the combination of the two gives birth to a dessert that is full of colour and flavour – Mango Pudding.

List of ingredients:

  • Ripe mangoes: 2
  • Slices: 5
  • Whole milk: 200ml
  • Sugar: 60g
  • Coconut milk: 100ml
  • Whipped cream: 50ml
  • Vanilla extract: 1 tsp

Preparation steps:

1. Prepare the mango

  • Choose fully ripe mangoes for the best flavour and aroma of the pudding.
  • Cut off the flesh of the mango, put it into a blender and puree it, reserving a small portion for dicing.

2. Processing the sliced giletine

  • Soak the sliced jellies in cold water for 5 minutes to soften them.
  • Squeeze the softened slices dry and place in a small saucepan.

3. Make the pudding mix

  • Add the milk to a small saucepan and heat over a low heat until slightly hot, not boiling.
  • Add the sugar and stir until completely melted.
  • Then add the softened custard tablets and stir until the custard is completely dissolved.
  • Remove the pan from the heat, add the coconut milk and whipped cream and continue to stir well.
  • Add vanilla extract to add flavour.

4. Combine the mango puree

  • Pour the mango puree into the pudding mixture and stir well to ensure that the flavour of the mango is fully incorporated into the pudding.

5. Pour and chill

  • Slowly pour the pudding mixture into a mould, either a glass or a special pudding mould.
  • Place the pudding mould in the fridge and chill for at least 4 hours until the pudding is completely set.

6. Decorate and enjoy

  • Remove the chilled mango pudding and top with the diced mango left over for extra flavour.
  • Garnish with fresh mint leaves for added freshness.
  • When enjoying this mango pudding, you will feel the sweetness of mango and the richness of coconut milk, as if you were in a tropical island, enjoying a feast for both taste and sight.

Tips:

  • When shopping for mangoes, choose varieties that are full of fruit and golden in colour, as these are usually sweeter and juicier.
  • When making the pudding mixture, be sure to keep the heat on to avoid overheating the milk and rendering the custard ineffective.
  • If you are not sensitive to giletto flakes, you can also use corn starch or other vegetable gums instead, but you need to be careful to adjust the dosage.
  • To ensure a creamier pudding texture, sieve the mixture once to remove any particles that may be present.
